BamaVol's vegetable slurry

BamaVol's vegetable slurry

We've been working hard to change bad eating habits for the last month. I came home last night with no energy to fix a meal which usually leads to trouble. I looked in the fridge and found a half dozen vegetables that I could use for a salad, but wanted to find a way to flavor it without the fat and calories of a dressing. So, the slurry was invented:

4 large radishes, chopped
6 small sour gherkins, chopped
10 steamed sugar snap pea pods, chopped
4 green onions, chopped
4 marinated artichoke hearts, chopped
1/2 green bell pepper, chopped
1/2 cucumber, chopped
6 kalamata olives, pitted and chopped

Serve over romaine lettuce and sliced tomatos or
in 1/3 baguette with lettuce and tomato slices.

Time to prepare: about 10-15 minutes, and you can snack guilt-free on the ingredients while you work

Calories: not too many (the artichoke marinade was more water than oil)

Flavor: loads (the pickles, olives and radishes add a lot)
