Clark County Dairy Wives Milkshake from the Clark County Fair in Vancouver, WA.

The Peach Milkshake is a MUST. Fresh peaches...and I think the ice cream is fresh, too. They're just...heaven. That's all I can say. LOL

They're so good that they'd have a hugely successful standalone business if they wanted, but unfortunately, they only open three times per year: the Fairbanks Golden Days festival, the summer solstice festival, and the Tanana Valley State Fair.

Dang, now I'm hungry! Next year, if my work schedule allows it, I am going to make a quick day trip to Fairbanks just for these pretzels...

A pretzel Do in FAI? They'd better be good (And AS better have a good fare sale :D)

And concur on eating & riding... I avoid the Ferris Wheel (afraid of heights ironically... but have had a queesy feeling walking away (stumbling) from Spin the Apple .

There was some cool stuff too @ the Arizona State Fair (This thing goes on for over a month IIRC... have a neat tram-ride over the fair grounds)

Oh, I remember the fried apple rings!

I also like fresh gyros at the Greek Fairs :)

I, for one, never had a problem with greasy fair food, a large coke, and then onto the roller coaster, but I have an iron stomach!

And I've had some wonderful soft hot salty pretzels before. Good cinnamon ones, too!

I like the fresh potato chips, also gotta have churros, thats a MUST.
Another must is Shave Ice. Then whatever meat product that has been smoked, fried, or grilled followed by mass quantities of beer.:D

Mmm, gyros! If you have a Greek Orthodox church in your area, see if they have a Greek Festival--we usually hit those several times a year for gyros. At one in October, we ate there for lunch and dinner on Friday, then dinner on Saturday.

One near us had a fall "mini-fest" for the first time this year, and I think we helped convince them to hold one every year... we were there for most of the weekend! :D

I've never understood the attraction to corn dogs. Regular hot dogs, or brats, yes, but not corn dogs. What exactly is the coating?
