IME, these days that would be called medium. For many years now, when I order medium rare, it is MUCH less cooked than that.
Now I usually order medium, and it comes out just like your photo, which I agree is perfect medium rare.

Tonight’s ribeye - 24h on a wire rack in the refrigerator after seasoning. 4h Sous vide at 130 with butter and thyme. Pat dry, rest, sear in carbon steel with tallow I made last week.
