Maybe I need to visit a Mexican grocery store - they should have head and tongue for sale. t? Oh, I thought we were talking about take out enchiladas which I do think travel well. But you are right, tacos get soggy. |

Beer brats with deli mustard, roasted Brussels sprouts with garlic, cocktail shrimp with Trader Joe’s cocktail sauce. One of the cats inspected the shrimp for quality assurance. |
Tonight's lazy dinner. Took a ziploc bag of previously made piggy bits (roasted pork shoulder) from the freezer and sauteed with some onions. When crispy, I dumped a box of TJs black bean soup on this, added some red pepper flakes, poured into bowls and topped with some sharp cheddar. Warmed up some mini naan.

Mr. Fink comes from the birthplace of pesto - Liguria. Pesto is a religion to Ligurians. Any pesto that comes in a jar, can, plastic container or any other non-homemade method is a blasphemy and is always awful. It is the easiest thing in the world to make and the taste is nothing like those poor excuses for pesto. the homemade pesto idea sounds very fun. I’ll have to search some recipes. |

Combos were burritos, chicken tamales with killer green chili sauce, and some other good stuff. They had the best refried beans, their rice was quite mundane. |

mojada is the taqueria term for a burrito with sauce, just like enchiladas. My favorite taqueria (Cancun) has enchiladas - I got some for somebody in September and I still refused to get myself anything there that day. It’s severe temptation as I walk past it - I’ve had many evening and late night taqueria meals there during the past 4 years. Well up to 2019! I walked past there both today and last week. They’re next door to my old favorite concert venue where I missed seeing Lydia Lunch perform in feb 2020 because I had just returned from CHICAGO and I was tired. I had some great concert nights there in 2019, usually tied with Cancun. It’s really huge that I don’t even go to Cancun now.
