Beef cheek massaman curry with lemon & coriander giant couscous. I cook Thai curry quite regularly, but first time with beef cheeks. Would definitely do again, the slow cooked beef cheek was excellent.

Grilled salmon, steamed asparagus (too skinny to grill) and mashed potatoes.

Leftover pizza -- lamb sausage, olives and eggplant. (The latter two are things Mr CE won't eat but he got his own!)
Oh, and we broke Dry January. |
Trader Joe’s chicken enchiladas
nachos with cheese, hatch chilis, black olives, and jalapeño chopped cilantro assorted vegetables house made guacamole (recurring thanks to corky & bensyd for the avocado confidence!)

I cooked Zahav's Baked Mozzarella Kibbe. Good result, but at 2 1/2 hours of total time, I can't see this becoming a mainstay at my house.

Did those Thai style bbq chicken thighs again. Damn they're good. Did some onions as well and then wrapped them in a tortilla with a tomato, avocado, coriander and cucumber. Very nice.

Dinner last night was a lamb stew, seasoned with a lamb rub from the local spice shop. "Hand-mixed from: garlic, cumin, black pepper, cayenne, kimchi chile, Szechuan pepper and ginger. (Salt-free)" And I added some salt. Accompanied by smashed red potatoes finished off in the air fryer, and some steamed broccolini with lemon / garlic.

A Hello Fresh! Chicken Tikka Masala meal. We've had good experiences with these so far and will continue ordering them.

Ah, so you do the onions in the cast iron skillet directly on the grill. Nice method.

Sometimes. If I'm doing a slower cook like reversing searing steak then I'll just wrap them in foil and put them in.
I posted iy before it's this recipe. Very simple, but so delicious. https://www.marionskitchen.com/thai-...illed-chicken/ ETA: I halved the garlic because 4 cloves was a lot. |
