the steak was leftover (just popped it oven at 350 after chicken was done) and really for me - maybe 2 ounces of meat? I only had 3 individual thighs because the others were in the freezer. Ideally I would have had a full 4-pack (Costco).

Had crab again .

Experimented with stir fried satay babi , tastes more or less just like we had ages ago , will keep tweaking the recipe .

Beef cheek massaman curry with lemon & coriander giant couscous. I cook Thai curry quite regularly, but first time with beef cheeks. Would definitely do again, the slow cooked beef cheek was excellent.

Leftover pizza -- lamb sausage, olives and eggplant. (The latter two are things Mr CE won't eat but he got his own!)

Trader Joe’s chicken enchiladas
nachos with cheese, hatch chilis, black olives, and jalapeño
chopped cilantro
assorted vegetables
house made guacamole (recurring thanks to corky & bensyd for the avocado confidence!)

I cooked Zahav's Baked Mozzarella Kibbe. Good result, but at 2 1/2 hours of total time, I can't see this becoming a mainstay at my house.

Did those Thai style bbq chicken thighs again. Damn they're good. Did some onions as well and then wrapped them in a tortilla with a tomato, avocado, coriander and cucumber. Very nice.

Ah, so you do the onions in the cast iron skillet directly on the grill. Nice method.

Was this a coconut milk/ thai curry paste type marinade or care to share your recipe ?

Dinner last night was a lamb stew, seasoned with a lamb rub from the local spice shop. "Hand-mixed from: garlic, cumin, black pepper, cayenne, kimchi chile, Szechuan pepper and ginger. (Salt-free)" And I added some salt. Accompanied by smashed red potatoes finished off in the air fryer, and some steamed broccolini with lemon / garlic.

Sometimes. If I'm doing a slower cook like reversing searing steak then I'll just wrap them in foil and put them in.
