Edited to correct my answer: From calves (cows who are young).

Veal comes from calves, which are young cows. Lambs are young sheep, and mutton comes from older sheep.

It's baby cow, and one of the most reprehensible finished meats ever devised for the dinner table.

My dad would agree - and he was a cattle rancher.

I've long ago come to terms with eating veal. In fact, some time ago I looked deep into the eyes of some cows and...well... there ain't much going on in there.

Gaucho100K,
I had the most wonderful veal chop at El Ceppo in Rome over New Year's. Absolutely sublime. Restaurant is not touristy, and is a place where Romans take their out of town guests to dinner.

The same can be said for about 80% of the human population; doesn't make eating babies who've been caged any more acceptable.
