We have been making it 3-4 times a year for 40 years. (One of my top 5 favorite meals) Tried it every conceivable way. Crockpot/slow cooker on high, barely covered with water, bit of salt, exactly 5 hours. Perfect every time. The one time we did it in a low oven uncovered but basted was a dry tough disaster. Tried it again covered, and it was slightly better, but ended up putting it in the food processor both times and making hash. We'll be making ours Sunday. Tender and juicy. :)

PS. Always buy brisket, never round.

yep...point cut.
I cover it in beer and a little water and cook at oven 250-275. .this one was about 2 1/2 hours. Came out perfect but I made it for tomorrow. Internal temp of 190-205.
it is one of my favorites too but I only have it 2-3 times a year.

Visited our local Chop House for dinner and it was quite good (and my first time there in four-five years).

Started with a house salad

I don't own a slow cooker plus I try to eat a bit healthier most of the time so tomorrow it is back to grilled salmon and veggies. The smallest corned beef lasts me at least 3 days.

This year I found a corn beef and veggies slow cooker recipe. Included coating the beef in brown sugar. A very different flavor and quite good.

Peking Duck in Hong Kong.

A fellow FT'er used the term "revenge traveling" and I'm "revenge feasting"! Upon ordering an entire Peking Duck the waitress looked at me quizzically and observed it's a lot of food for a one person. My reply was simply not to fret over it since the restaurant won't be closing their doors for at least several hours, which should be enough. Jokes aside, I was coming off a 48 hour fast & needed a feast!

Not that I'm proud of it, but except for a piece or two, I finished the entire duck!

LOL...No soup, sides or anything that might even prove a distraction to my singular focus on enjoying my duck! I was by myself, no obligations, and completely free to be as uncivilized and unrestrained as I please. Oh, for tradition's sake, I did order a plate of Yeung Chau Chow Fan, and instructed my server to place a small portion in a bowl to end the feast.

Sorry. I should have clarified. First course of peking duck is the pancakes/skin/meat thing. Second course would have been a stir fry with the leftover meat and lettuce cups or a soup made from the bones or maybe a fried rice with the leftover meat (in some places that's second and third courses). Basically so as not to waste any of the duck (if only the first course is ordered, restaurants often toss the carcasses into a pot for their "daily" (read free) soup for someone else.

Got it. No, told them to skip the pancakes and side stuff, and just wanted the entire duck; no soup, stir fry or any of that--I just wanted the duck meat & of course the skin on a large plate fully de-boned and sliced into bite sized pieces.

Ah. So Friday night carnivore dinner. Gotcha. Duck isn't cheap these days. Would love to do that sometime in the near future. (although I like the stir fry in the lettuce cup as well.... I just don't have the patience to ripping all that additional meat off the bird). Maybe I'll do it sometime in the near future. It's good stuff when I'm trying to game.

Last night in one of my favorite HK restaurants.

Traditional 3-course and 1 soup dinner, ordered a la carte, of course. Started with Shark's Fin soup, followed with braised fatty pork, sliced abalone, and a steamed fish as my 3 entrees. For dessert, very dark chocolates (80%), cigar and XO after dinner, then stroll to admire the HK Central skyline in all of it's evening glory.

After evenings like this, I always think this is the greatest city in the world.

Yes! The fresh halibut is coming in early this year. We haven't bought any yet, but have seen it for as low as $22/lb. We're waiting to get it off the boat, which will be soon I hope.

I got a beautiful piece at Costco. I think that's what I paid. $22 lb. It was delicious...I would buy it again.
