Unhappy postcovid vibes [Street Food]

Just wondering after this tough tribulation of covid will street food still retain its authenticity and market?

Was it shut down by you or more popular? I'm not in a big food truck area, but when indoor dining was closed a brewery near us had a couple food trucks in their parking lot -- you could sit at tables in the lot, drink their beers and eat from the food trucks. My thought is, if able, they should just make this a normal summer offering because it was so much fun. I would guess that in some areas people discovered food trucks because of COVID, and that can only help.

Food trucks are busier than ever and it’s the new street food. Not to be confused with the restaurants that advertise that they’re serving street food.

The take north of the border is it's a path for cooks to start their own business w/o incurring horrendous overheads. This was a trend pre-COVID.
