My favorite gumbo anywhere is Mr. B's in New Orleans Ya-Ya gumbo. They have shared their recipe on their website. I have made this before and it's delicious, it's a dark-roux gumbo.

The post-Katrina diaspora means lots of Louisianans have moved to this area and quite a number have opened restaurants. I've always thought of gumbo as pretty labor intense, not conducive to making in a crockpot. Given those 2 things, I go out for my gumbo fix.
