This is possibly pedestrian compared to other answers but what about The Four Seasons in New York City? Interior decorations change with the seasons, major art pieces etc.

Perhaps we should also consider dining in Emirates First Class. Most "most fanciest" restaurants have an exit in the same place as their entrance. With Emirates it's in a different continent. We may be jaded flyers, but that's still quite fancy.
