Let us now praise "Frito Pie".....
A small bag of Fritos, slit longitudinally and spread open,
Chile, canned, "Wolf Brand" no beans, the classic, a ladle full.**
Grated "Rat" cheese
Chopped onions atop.
**Aficionados may substitute "real" homemade chile.
Now, there's fast food at its best and most unhealthy!

I'm sure some will call me a heretic, but for a slightly more civilized version try this.
Fritos in bottom of caserole dish.
Top with shredded lettuce.
Then top with heated Chili of your choice.
Then top with shredded cheese.
Broil until cheese is bubbly and slightly browned.

The trouble making it the way you suggest here is that the Fritos become so wet as to be non-recognizable. I know because I tried it that way.

Best to heat up your chili to the boiling point, pour it over your Fritos, toss on some chopped onion, and allow the cheese to melt naturally.
But, for God's sake, no hot lettuce, please.

I have always been partial to Berts BBQ for Frito Pie although I usually preferred the T-Man. It was a sad day when the joint near campus burned to a crisp, but now it looks like they are back close to UT. Always good and friendly people at Berts - their brisket was never the very best but everything else made up for it.
And if you are in Austin, for lunch only, visit House Park.
I still miss the original Hoffbrau here for steaks. LBJ used to visit this place - smart ... waitresses and only a verbal menu - small T-Bone or Large, with fries swimming in butter. They had an Aggie Bowling Ball on display - a red brick with three holes in it.....

The trouble making it the way you suggest here is that the Fritos become so wet as to be non-recognizable. I know because I tried it that way.
Best to heat up your chili to the boiling point, pour it over your Fritos, toss on some chopped onion, and allow the cheese to melt naturally.
But, for God's sake, no hot lettuce, please.

I'll go a step further and say that any lettuce (or vegetable-like substance) is the antithesis of Frito Chili Pie.
Layer of Fritos, top with chili and optional diced onions.
Repeat layers.
Top with cheese*
Bake.
That is all.
*Shredded colby or cheddar, at the ballpark it might be nacho cheese sauce, but the best cheese is actually the government-surplus-food-stamp cheese. Thankfully, I don't even know if they make that stuff anymore.
