What I don't get on the payload issues/events is this
There is a significant human difference between me and 20 guys my size 6'4 240ish and my SO and 19 of her friends
I know they can run numbers on averages and what not but if we are talking 50lb bags, how can human weight difffernece between pax not be necessary in these situations?

The Airbuses's aren't good at transcon. Check a track log - they step climb since they can't get to cruise until they burn off some fuel weight.

DL 48, TPA-JFK, a 717 was payload optimized because of extra fuel to allow for weather en route.
FAs announced it and all the carry ons got loaded.

Any guesses: Why is my flight payload optimized
An A319 from MSP to BOS. Outside air temperature 18 degrees. Rain in Boston.
I do this flight a lot. A lot. I can only think of one previous time it was payload optimized, and not on the relatively late my-range A319.
Is it the rain? Some very heavy cargo? Something else entirely? Any guesses?

Definitely surprising given the fact it's an A319 and the airports in question.
Obviously have no idea but it's probably either valuable cargo or an MX issue that is limiting MTOW or MLW. MX issue seems unlikely though if it's MSP->BOS as I'd figure they'd just keep the plane in MSP to fix it and sub it out for another plane. Seems more likely that it would happen BOS->MSP.

Could there be concern about a possible need to divert to some airport that's farther away or to be in a holding pattern for a while at BOS?

Being serious it could be heavy cargo (such as aircraft parts) going into one of the compartments and so weight and balance comes into play.

Concern for rain turning into ice, and a big storm means lots of airports that might normally be available for diversion could also be closed, would be my guess for payload optimization. Ask the pilot how much fuel they loaded vs. what is typical for the route.
