Need help finding new credit cards or selecting a go-to

My business spends on average $30K/mo.
About $5K are office supplies/telecom, so that's handled by Ink Bold.
Other bonus categories are minimal - adding up to about $1000/mo, if that.
The rest is non-bonus categories.
I've gone through the typical cards, hit all their spend requirements, and now need either something new, or just pick a go-to card and put everything on it.

These are the cards I currently hold

Amer Gold Premier
Amex Bus Gold
AmEx Bus Plat
Amex SPG Bus
Amex Bus Cash (2% CB)

Chase Ink Plus
Chase Ink Bold
Chase united
Chase BA Visa

Citi AA Visa
Citi ThankYou
Citi Preferred (5x drugstore one, open for now)
citi premier
Citi Simplicity

CapOne Profsnl (double miles)
CapOne Venture(double miles)

Barclays arrival

These are the cards I recently closed

Amex Gold
Amex PlatPers
Amex DeltaGld
amex Bus Gold
Amex Hilton Surpass
Amex SPG

Chase Sapphire
Chase united

Citi AA Amex

(if there are duplicates, it is because some cards were in my name, and some in my wife's)

All the cards that are opened have had their spends hit (i.e. $25K on United for bonus 10K miles, $30K on BA for companion cert).
Barclay Arrival was opened specifically for a $45K purchase that I'd like to pay off over a year with 0% - it was the best combo of sing-on bonus, rewards, and 0% APR.

We often like to go non-chain boutique hotels, so it's nice to have a card that allows straight travel redemptions, like CapOne. That's been my go-to card in the past. Should I keep it as the go-to, or pick something else?

I don't have personal knowledge about all your CC's but the SPG is a flexible card with it's transfer options.

It is really hard to make any suggestions without knowing which cards were yours and which were for your wife. Also when you applied for each card.

Yes, of course...luckily, I keep a spreadsheet with that info.
Can;t get the post to format properly though, so not very readable, sorry.

You've been through such a vast number of cards, it seems like you should be giving us advice. You specifically like the Ink for the 5x in your major spend area, plus you like the Capital One for its use in boutique hotels.

Perhaps you prefer one airline over another, based on your location or destinations.
Perhaps you value Club access or cash back.
Perhaps you like short, frequent trips or need to move a family of 4 on long hauls. All that would make a difference in advice. But, regardless, your monthly spend exceeds many people's yearly spend, so you should be racking up the points at a tremendous rate.

Keep in mind that my spend doesn't hold a candle to yours, so I always focus on sign up bonuses.

I'm not gonna sit for hours and analyze your patterns, but off the back of my head between the 2 of you, you need to hit the following:

Both of you apply for Amex SPG Biz

1 CSP and Ink whichever you don't have.

Hitlon cards: 1 from Amex, 2 from Citi, 2 Hawaiian, and Virgin Atlantic, perhaps Amex Surplus too.

Both of you apply for Chase Hyatt and Fairmont. Get the match for Hyatt Diamond before applying.

Both of you apply for US Bank Club Carlson, personal and biz.

Another Barclays Arrival

Both of you for Chase Marriott and Priority if you still want something else.

With your spend capabilities, it's freaking scary what you can achieve.
