I could not wear noise-canceling earphones on a plane, or anywhere else except at home where I don't need them. Not being able to hear what goes on around me inhibits my situational awareness and that makes me a sad panda.

IME the noise-canceling earphones (my Sennheisers or the fancy Bose ones) don't really cancel out voices, just cabin noise. The in-ear Shures that I have do a much better job of blocking voices as well as other noise, even though the fit is better in one ear than the other.

My situational awareness is often too high for my own good. I notice stuff that no one else does and my mind needs to relax every so often.

I have a pair of cheep Sony's. I currently can't use them because I lost one of the rubber thingies. they block most noises except screaming babies. I can't sleep with them with the active on because my overly sensistive hearing picks up the noise cancelling sound which seems to tell my brain there's actually a lot of noise. I'm out like a light when I turn it off. They still over some decent amount of passive and using iPods and IFE is so much nicer with them.
