Checking in Additional Luggage in layover Airport?

Checking in Additional Luggage in layover Airport?
We plan to take our son to Florida next year, and currently our return AA flight connects us to LAX for a long layover then connecting to a CX flight.
My question is this. . . Can I check in my luggage from MCO to HKG all the way, and then ADD more luggage while in LAX (plan to go to Costco and stock up!) ie: check in two luggage from Florida straight to HKG, then add two more in LAX? Or will this cause TSA and/or CX to go nuts? Anyone has experience doing this?

How many of you are traveling and in what class? how long is the layover? mind you that LAX could get really busy at times if you don't have status.
