Define Peak season.
Origin? Destination? Routing?
Revenue ticket?
Or Award ticket?
Economy or Premium classes?

Different regions have different cut off dates. EU-HK, EU-Asia, EU-Japan, EU-Australia will be different if its from Australia to EU, Asia, HK, Japan, just as US/Canada to HK, Asia, Japan...
Similarly, HK to US/EU/OZ has different seasons. So you have to be SPECIFIC as to where you're flying from, to and what time of year.

Sorry, Guy Betsy! I am planning to fly from LAX to HKG in late or early December. I am trying to figure out the seasonal cut off date. So I can leave before that to avoid paying for the fare increase.

Actually the price increase (high season)is from Dec 3rd to Dec 23rd.
However, I would suppose cheap fares (ie subclasses) on Dec 24 onward would be difficult to get. It's all booked out, particularly for 24th, for obvious reason.
I personally believe seasonal setting for North America is too generous. For ex-australia on CX, the high season sticks around until January!

The high season for this year for ex-Aust to HKG starts on 09 Dec and stays till 16 Jan next year. The price difference for shoulder and high on CX is about A$400-450, depends on length of validity.
