For non status card holders, the requirement is three times in 12 months, not 3 months.

My plan is to arrive from CX 881 in F at 7:40am, go to The Wing for a shower and breakfast, exit the airport and take the train into Hong Kong. After playing tourist for the day, take the train back to HKIA, have dinner in The Wing, maybe another shower, and depart on CX 611 at 8:10pm in J. According to what you say, I am considered in transit and can use the Wing upon my return to the airport, right?
The Wing is on the airside of HKIA, you technically can't spend some time in the Wing after getting off CX881 if you intend to visit the city. But there is a way to reenter the city from the departure side of the airport. You could tell the lounge agent that you would like to go back to the city, and they will take you through a series of backdoors to be back on landside. I never tried, nor do I intend to in the future so can't comment on how much of a hassle this can be.
There was some question above about getting a cabana to shower in the Wing. I've done this several times with no wait or just a minimal wait (they give you one of those vibrating buzzer things to let you know, so you can wait wherever you want in the lounge) since the remodel of the Wing, though I guess waiting times can vary. But I believe there are also shower rooms in addition to the cabanas, so you can wash up even if the cabanas are full.
Can't comment on using the Wing versus the Arrivals Lounge, but doing this via the Wing is pretty easy and the Wing (especially in F) is a very nice lounge.

As Cathay Boy explained it's free if you are MPC Silver, Gold or Diamond, or if you travelled to HK 3 times in a year. However you need to sign up first which is done after going through immigrations in the Arrivals Hall, so to answer your other question, no you cannot use it for a one time entry.

Question with regards to the above. If I'm on CX 879 (SFO - HKG) in F which arrives at 7pm at night and then am departing the next day at 12pm on KA 900 in J (HKG - PEK) will I be able to access the F portion of The Wing since the transit will be less than 24 hours or because of the overnight will I be limited to the J lounges via KA J

My first time registering for E-Channel, I didn't know you could get it with your FFP card, so I waited until the third (not the fourth) on that passport and was registered with no issues. With my new passports, I have been using my MPO card now.

To be honest, I am not sure. I am a DM member so have access to the Wing F regardless. What I am certain about is that <24 hours is how CX denotes a "transit" (vs "stopover") for ticket purposes, and that CX does allow(certain? all?) transit passengers arriving on an F flight transfer to regional J access to the F side, regardless if the departing flight is another day.
Hopefully some other folks on here can chime in to make sure. I'm certain I've seen folks post about this identical issue before.

Ahh thanks to those who chimed in. I guess I'll have to wait and see or better yet KA can release a 2nd F seat on the PEK flight and I can switch us to F for the PEK flight for free now that US and AA have merged their mileage programs and make this a none issue.
Worst case is we're forced to check out other lounges at HKG (I've only been in The Wing so probably a good thing but the gf is a fan of the champagne bar so don't want to disappoint)
