The Wing is on the airside of HKIA, you technically can't spend some time in the Wing after getting off CX881 if you intend to visit the city. But there is a way to reenter the city from the departure side of the airport. You could tell the lounge agent that you would like to go back to the city, and they will take you through a series of backdoors to be back on landside. I never tried, nor do I intend to in the future so can't comment on how much of a hassle this can be.
susiesan, what you're planning to do should be no problem. Arriving in F from the USA and then departing in J for Cambodia, I did this just a couple of months ago without any problem, though under slightly different circumstances. (Forgot to bring a photo with me for getting visa on arrival in Cambodia, so went through immigration and customs to get photos at a machine in the landside part of the airport.) The F lounge staff at the F entrance to the Wing seemed quite accustomed to helping out in this way. I left my bags in their office and got tags for them. I had to wait perhaps 10 minutes for a staff member to become available, but then he escorted me as far as immigration into HKG. So I was stamped out and then stamped back in just 20 minutes later, after getting the photos. So you'll be able to do the same after spending the day in HKG.

There was some question above about getting a cabana to shower in the Wing. I've done this several times with no wait or just a minimal wait (they give you one of those vibrating buzzer things to let you know, so you can wait wherever you want in the lounge) since the remodel of the Wing, though I guess waiting times can vary. But I believe there are also shower rooms in addition to the cabanas, so you can wash up even if the cabanas are full.

Can't comment on using the Wing versus the Arrivals Lounge, but doing this via the Wing is pretty easy and the Wing (especially in F) is a very nice lounge.
