I have not checked lately, but I fare is often available from TPE to many destinations. It is sometimes available on web only and may not allow any stop in HKG.

You can try booking on the web first.

It's not so much of "fly via Taiwan", it's having to fly to TPE and back to HKG before your journey really commences. It costs a minimum of 5 hours, more often 10. Entirely depends on how you value your time.
