Security wait times at YUL

The security wait times at US airports have been increasing. Two friends and I will be spending a long weekend in Montreal in early June and returning to the States on a Sunday (early) afternoon. How much time should we allow for checking in and going through security? We want to get to our gates without huffing and puffing, but also want to avoid excessive hanging around the airport waiting for our flights.

Other than early morning, there are rarely any lines for security or customs for trans-border US departures at YUL. Wouldn't be surprised if you were the only people in line on an early Sunday afternoon. There is a 60 minute check-in deadline for "international" flights. If you are checking bags, I would arrive at least 75 minutes before departure. You will still probably wait 30 minutes at the gate before boarding.

I have a 7am flight from YUL on Saturday on Air Transat. At what time should I present myself for security screening? (yes, the official guidance says 3hrs prior, but I'm curious about what's realistic)

Assuming you don't have access to any fast track channel (Nexus etc.), I'd be entering the security line around 6am. I'd estimate ~20min to get through... If you want to be the first to board or more time airside, go earlier.
