I would also suggest considering the San Diego Zoo Safari Park (not the same place as the SD Zoo). It is in Escondido, not much of a drive from where you will be. Here you will get an opportunity to do a fun walkabout, see some very endangered animals, be among some of the most endangered plants life, and all the while know that you are helping keep them alive in nature. https://www.sdzsafaripark.org/
Very nearby is Orfila Winery. Great view and good wine...tastings 7 days a week. https://www.orfila.com/ If beer is more your style, then I suggest Stone Brewing. https://www.stonebrewing.com/visit/bistros/escondido. Dining there is great, but a bit expensive. If you want to finish off the day in Escondido consider Joe's for dinner on the less expensive side. Joe's Italian Restaurant, Escondido, CA
A huge Mature/constantly upgraded and maintained Zoo and plant preserve is the San Diego Zoo and it is really near where you will be. https://zoo.sandiegozoo.org/ Lots of up and down walking, but a tram system is available to make it easier. There are a dozen or more gardens in Balboa Park (home of the zoo). The Park also hosts several museums to cater to many tastes.
If you have not been on an aircraft carrier, this is a great opportunity to do so. https://www.midway.org/
Don't know what part of Ca you live in, but the beach life is great to experience, if you do not do that now. Lots of choices.

Yes, and welcome to FT!! La Jolla is great for late afternoon and a good sunset drink at Torrey Pines lodge OR George's. Easy to integrate into a Sea World day. Also a good morning hike down the beach is great!

BTW there are a lot of museums in Balboa Park, so one could easily spend multiple days just visiting those. Which ones were you thinking of doing?
