Not sure if you have looked into the UA 858 PVG-ICN-SFO. I flew on Feb 28 when UA 857 was not carrying passengers (just cargo). The oubound flight from China to the US can still carry passengers.
May be the diversion won't impact the inbound cargo flight.
For now, the change to PVG flights only affects Chinese carriers.
UA/AA/DL stay at PVG.
