With the 1.5-size door, I think it is probably wheelchair accessible. I wonder if there's still a lavatory right behind the cockpit, since I think that's standard on all A320-family aircraft.

According to
this article the A321LR will have a 22J/138Y configuration (total 160 seats). The A321HD has 200 seats. No word for sure on what the Mint-equipped A321neo (non-LR) will get, but it will have these seats.
