Other OW carriers and online tool interpret the hawaiian backtracking rule here differently and allows LHR-HNL-NA routing. Maybe AA just doesn't like to carry pax back and forth to HNL from mainland.
I hadn't realized that AA 109 is a through flight LHR-HNL, so you should be able to use it as only one segment. As for the question of if it touches North America or not, I can see AA's case, since at one point the OW rules explicitly called out a through flight as touching the continent of the stop:
Travel between South West Pacific and Europe/Middle East on a single flight number/or by surface is considered travelling SWP-Asia-Europe/Middle East through three continents.

Interesting note, initially AA webpage showed the price for the booking correctly, but after ticket reissue with correct taxes, it doesn't show the price at all. Moreover, AY seems to now show incorrect total price of 165720 A$ for the ticket. Before reissue, also AY was showing price correctly. So I would guess, that AA have lost the price information in the reissue process and they would need to fall back to mileage based RDM earning?
I almost always see RTW trips show as $0 after the ticket is reissued. I'm not sure that means AA "lost the price information" since the e-ticket shows that it was an even exchange for an earlier ticket, which does show the price. It's possible, of course, so please do let us know.
