There seems to be tax reasons for serving the swill pre-departure and nectar from Reims post wheels-up.
Once airborne, one must exercise vigilance to ensure that the trolley-dollies don't serve you Cava, prosecco, or white lambrusco in lieu of proper champers. Alas, to too many it's all the same fizzy stuff.
