i think one of the hidden factors is how they make their broth. i believe it's customary to use beef or ox bones, and the good places know that they need to throw out the first boil, to get rid of the blood and fat. some places add msg, and some people don't like cilantro. and since you mentioned gamey, you might have tried pho with poultry, so perhaps you should try it with beef.
