Interesting question. I performed a test:
Using Shure e3c headphones, it did exactly what you wish. Sound through the headphones and talk through the on-board mike.
Using Bose QC2s, it didn't work so well. When the call arrived the music stopped with a GSM signaling noise in the headphones. During the call there was only a crackling/popping noise in the headphones, the person on the other end of the line
could hear what I was saying.
