• Tilapia poached in Orange Butter presented with pak choi, pancake filled with curried crayfish and a tamarind and red onion chutney
• Slow-roasted Breast of Chicken enhanced by tomato jus, Parmesan polenta and crushed minted peas garnished with smoked turkey
• Roulade of Braised Lamb with a rosemary glaze offered with green herb quinoa, asparagus and pickled aubergine
