What a shame that the Lure closed. That was a fun place.
Picking just one is not easy, but the C***ring in Amsterdam usually makes for an interesting evening out. Though I have not been to AMS in almost three years.

Well I guess I have a few "favs"
The Bourbon Pub is great in NOLA
BOOM! in Minneapolis is great for a video bar, esp on Sunday nights and their restaurant Oddfellows is awesome, 4 stars I'd say
Roscoes in Chicago is always up there, since it was my first gay bar, though I miss the old cafe they had, which had the best cheesecake and sandwiches, a great way to grab good food and chat with someone new....also since I was underage....the best way to sneak into the bar....eat at the cafe then go to the bathroom which was in the bar area and oops...never come back....
The Stud on Tuesday nights in San Fran is always a good time.
Out of the country:
Europe: G.A.Y. is a wild party in London, but I can't remember the name of a cool little cocktail bar in Cologne Germany...

Omg.. I used to sneak into Roscoes that way, too! Hehe. It was scary the first time but I got used to it.
It was Hula's but they paved paradise and did put up a parking lot
I never got to experience the previous location of Hula's but it's still my favorite. I love being able to walk in almost any time of the day or night, any day of the week and having people without a ton of attitude to visit with - plus the view of Diamond Head and Waikiki Beach are still stunning.
I must counter the "seen one, seen 'em all" comment..

"The Park" - Roanoke, Virginia. Haven't been in a few years, but it was the only gig for 150 miles around... as such, it attracted a truly diverse element... whites, blacks, girls, boys, cowboys, drag queens, club kids, preppies...
Music was diverse too... they would play everything from house, to c/w, to slow-dance ballads. Music stopped, as crowds swapped out on the dance floor.
"Friends" - Prague, Czech Republic. Great place to meet people to have conversation and make... yes, you guessed it... Friends. Have been here a few times on a few different trips... and have never failed to strike up conversations with native Czechs or various ex-Pats, tourists.
"The Lure" - New York, NY. R.I.P... *sigh*
