Not to be too off topic.

When we first moved to Taiwan, without knowing a single word of Chinese. I needed a haircut really badly and my friends kept warning me about the "barber" shops. I was really worried I would wind up in one of these pink barbers.

Finally found a barber/hairstylist with CLEAR glass window pane, so I went there. I thought it was really cheap and decent haircut, my neighbors told me later that she is the most expensive haircut on the street and in the back room they do other things......

Ah, memories....

Common to go to have only your hair washed and head massage, not just hair styling. This accounts for the added demand. Also barbershops can be a front for hookers.
Hence the proliferation of hairdresser/barbershops and extended hours of operation.

The shop I used to go to wasn't a front for anything, closed at 930pm. But, I getting the head/hand/neck/shoulder massage is part of the Chinese haircut experience.

Some people might sell very few haircuts, but any haircut they do sell would be priced at $100. Also, how do you know how long they have been selling haircuts for $100 versus being a new fly-by-night who will move before their reputation becomes known? I've seen bad $100 haircuts, although $100 isn't considered a lot in a major USA city.

If you haven't met Paul Romer, you should. You can easily spend a night discussing haircut pricing with him.
