Real find near DEN
A couple of friends and I went to African Grill and Bar in the Green Valley Ranch shopping center, off of Tower Road (less than 2 miles from the cluster of airport hotels on Tower Road) for dinner last week. Mostly West African fare, which isn't entirely obvious from their website. We got lamb samosas, fried plantains, coconut stew with chicken, okra stew with goat, and spinach stew with oxtail. (The stews came with rice.) Everything was very good and the stews were all quite different from one another.
I'm keeping this in mind for future occasions when I am spending the night near DEN. I do wish they had African beers other than Tusker, though, since I prefer Club.

Denver restaurants
We just returned from Denver and ate at the following.
Fruition - nice restaurant, quiet and some good dishes although some had strange seasonings
Blue Oyster - Cherry Creek - fun seafood restaurant
Garbanzo - Glenco- fast casual Mediterranean which we ate two lunches - tasty
Jax Seafood - skip this one as it's nothing special, highly priced and moistly full of people from Residence Inn (on a corporate budget, I imagine).
TrueFood - nice outdoor atmosphere with food designed by Dr, Weil. My husband loved it.
Breakfast was at the hotels.

I would rate The Timberline better than "mediocre." They do a good, solid "B+" cheeseburger anyway

Flying UA, you'll be in the B Concourse unless something really strange is going on.
For B Concourse, you can probably get the best food at Elways, for a price.
Other options, for something a little simpler: En route to the gates where many of the UA/UX regional flights depart from (gates B80 and up) is New Belgium restaurant (near the Starbucks, before you go down the escalator). Burgers and pub grub, and of course, their beer.
Going down the escalator, near B90 is Heidi's Booklyn Deli which usually has pretty good sandwiches.
If you actually have a 3 hour layover, you will have time to go to either A or C concourses. Denver Chophouse in A is similar to Elways. I haven't been to Root Connection, but aside from that, I don't think you would improve your options much by leaving B.
