B2 Visa Application/Interview Help

Looking for some advice. Searched but couldn't really find what I was looking for.

Last year I spent 5 months working in the Philippines, and started a relationship while over there. I've been back several times in the last year and things are going well.

We want her to come visit the US to see how she likes it, but I'm terrified that she won't get approved for a visa. Hoping I can get some advice to hopefully make things go smoothly. She's planning on a 2 week visit, and we plan to stay in Minnesota the majority of the time, with a trip out east to see where I grew up.

She just received her passport, and hopefully we'll schedule her a visa interview in the near future. Is there any concern in having the interview so soon after she received her passport?

We've gathered documentation such of proof of employment, proof of family ties/land ownership/residence, return travel (not yet booked, but will be soon), proof of leave from work. Are there other pieces of information that we should have printed out? I'm planning to cover expenses while she is here, is there anything I can provide showing that?

I am very concerned that the fact that we are in a relationship will be a non-starter for getting approved. While we may look into engagement and marriage down the road, it is absolutely not something we're talking about right now. I'm wondering how forthcoming she should be in her visa interview. She'll primarily be coming to visit me, but she became friends with other coworkers of mine while we were all in the Philippines, and will visit with them as well. We obviously don't want to lie, but how up front should she be?

Finally, if all goes well and she gets approved for the visa, are we going to go through the same thing when she arrives into the US? I'm planning on flying out there and then back with her. While I have Global Entry, would I be able to accompany her through CBP? Would that be wise, or raise concern?
