Change in Hawaii meal policy?
I recently flew SFO-LIH and we had two choices - French Toast or that nasty (IMHO) Southwest Omelette with the beans and peppers. There was no first course with fruit or yogurt either - just a small side of fruit. The tray was also very small so I don't think the crew was combining things against procedure.
We did get the basket prior to arrival. I'm flying the return soon so I'll be curious if there is a multi course meal LIH-SFO.
Is this because UA doesn't cater in LIH and they have to take the food round-trip so this explains the limited choices and small trays? I feel certain they get food in HNL but not sure about OGG and KOA.

I had this meal recently and was shocked (in a good way) to get an airline meal that was actually a bit spicy. The eggs were overdone but still edible. Sausage was good. Fruit was just OK. My biggest complaint was that the bowl in which the omelette was served would just not stay put on the placemat. The bottom surface area was too small or something, so I had to hold it with one hand while I cut the omelette with the fork in my other hand.

All of the United nonstops from LIH to/from California that I've ever flown on have been double catered. They top up ice and drinks in LIH, that's about it.

Why is this? All of these locations (well, maybe except Hilo) have resort-quality facilities and sourcing around, I would suppose. Is it that the flight volume is so low that a catering company can't operate cost efficiently?
