one-way vs. multi-stop

I'm looking at a one-way flight from ANC to BOS. On the United.com site if I construct it as a multi-stop with the second leg on the same day, the rate is $100 less. If I book this will UA check my bags through to BOS or will I have to grab them and recheck?

Unless the connection is very long, they will be fine checking it through regardless of how you booked it. I can't remember the exact number (it might even be 24 hours), but I imagine it won't be an issue in your case.

You will be fine at 2 hrs. Once you book it, it will actually appear like one booking.

As noted, it should ticket on one PNR and so you should have no problem.

Since you can book your luggage through on two separate itins (which I've done when combining a paid and award ticket, UA & Egypt Air), seems like this would be a no-brainer?
