Help me feel into it if my (non status )folks have a chance at using their mile to upgrade this flight next year.........

...or are there perhaps days that are not as popular?

Sunday or Monday going to ANC is usually full up front, almost impossible upgrades. Other days are often pretty easy.

I have to concur even as an 1K I've sweated out a lot of Upgrades to/from ANC last year...

If you're looking at flights for next year, and plan to use upgradable instruments, you should see some confirmable availability right now. Elites upgrading via CPU up to 72 hours out is harder.
