Codeshare tracking
Has anyone discovered a reference where we can find how a given UA fare tracks across to the codeshare airline's own fare classes? Sometimes these match (like a K UA fare will track to a LH K) but this is not the case between UA and other STAR carriers. Particularly interest in UA to SAA fares.

There is no authoritative public source that I'm aware of. All I've seen are tables compiled from experiential data. I've got one of those here but it is woefully incomplete and is from the old fare codes so things may have changed. And it doesn't have the UA->SA codes that you are looking for.
