I have done this exact transfer a number of times, make sure you have your itinerary printed as the transfer agents usually ask for it. Last time I did this flight we were delayed into HKG and I still had time to go to EK lounge for a drink and a snack.

A possible wrinkle is that the transfer security may give you grief about an online printed boarding pass. Worst case you have to go to the transfer desk and get a new one.

You should be able to check in online for EK. They're staff has always been amazing, professional and able to solve just about any issue quickly. I'd image 2.15 hours for an interline transfer would be plenty of time. However, EK generally closes their gate 30 minutes prior to departure. Assuming HK is like the rest of the EK locations I've flown, be SURE you're in line at the gate at least 31 minutes before departure.
If you've never flown EK, you're en for a treat. Their coach product is better than most of the US Carrier's Business, with the exception of the seats.

I flew the EK 380 in business last year BKK-HKG. It was amazing!

Well, my flight was about 90 min late. They had to unload 8 people at ORD due to weight issues...and it took forever to get their luggage out. Landed at HKG and was out the door with 30 min to make it to EK flight. The FAs were great and arranged for someone to meet and escort me. Got new BP at transfer desk, got through security in minutes and was on the plane with 20 min of have deplaned my UA flight.

HKG is great with this stuff, especially if you are on a premium ticket....
