Dom Perignon has built its reputation on quality and the name today is synonymous with luxury. The 2006 vintage offers a nose which is at first floral, opening up to candied fruit, ripe hay and toasted notes, along with hints of licorice. The palate over delivers with great intensity and purity. Structured, focused, creamy and silky. An excellent aperitif and a great match with a range of food, especially caviar and other fruits of the sea.

Chateau Cos d'Estournel Blanc 2011
Bordeaux, France
This exotic and opulent chateau is famous for its magnificent red wine which earned it the status of "second growth" in the revered 1855 classification of the Medoc. The white wine from the estate however is building an ever expanding legion of followers. This vibrant and mineral wine is a blend of Sauvignon Blanc and Semillon, the ripe nose of green apple, pear and a touch of undergrowth is enhanced by a compelling saline quality. The palate shows good weight with a slight honeyed/white peach note on the entry, crisp acidity and a pleasant green apple and lime tinged finish. A great pairing to shellfish and grilled fish dishes.
Levantine Hill Katherine's Paddock Chardonnay 2015
Yarra Valley, Australia
It was Elias and Colleen Jreissati's dream to create an Australian winery that would produce exceptional French inspired wines, however for this they needed the perfect location. It took them ten years to find it, but the plot of land they discovered rising from the shores of the Yarra River was perfect for their vines to thrive in. These East facing steep clay loam slopes, at similar elevations to the Grand Cru vineyards of Chablis in France are situated on an incredibly unique and advantageous position. The 2015 Katherine's Paddoc has aromas of stone fruit and grilled nuts with hints of chalk. The palate combines richness with a fine-boned, flinty structure and restrained acidity. A great wine to pair with seafood and grilled white meats.
Cloudy Bay Sauvignon Blanc 2016
Marlborough, New Zealand
Possibly the new world's greates wine success of the last 30 years. From the same owners as Dom Perignon this is a white wine that has become synonymous with luxury and subsequently hard to come by. The 2015 Sauvignon Blanc has a nose of lemon blossom, grapefruit and eiderflower. The elegant palate is full of vibrancy with citrus notes and a steely finish. A perfect aperitif and great with a range of cold starters.

Domaine Faiveley, established in 1825, is one of Burgundy's oldest domains. Erwan Faiveley, the seventh generation to lead this famous house, picked up the reins in 2007 and has raised the bar with elegance and complexity in the wines. 2014 is a splendid year for white Burgundy, and this Pouilly Fuisse displays the energy characteristic of the vintage. Fresh and elegant on the nose with a diversity of aromas of white flowers and citrus fruits. This wine is very expressive and round on the palate, yet it has vitality and lift which carry the nut toned and honeyed, citrus flavours to a long and complex finish. Perfect for shellfish and poultry dishes.

Chateau Cos d'Estournel 2004
Saint Estephe, France
The beautiful oriental themed Chateau of Cos d'Estournel is situated in the most northerly Medoc commune of Saint Estephe. As a neighbour of the great Pauillac Chateau Lafite, Cos is capable of producing some of the best Cabernet grapes of Bordeaux, which makes up 60% of the blend. Due to a high proportion of clay the Merlot produced by this property imparts a voluptuous character to the wine. A nose of blackcurrants, damson, cedar wood and licorice lead to a medium weight body with ripe fruit and a long, pure finish. A cerebral wine to be enjoyed with red meat dishes.
Mount Mary Quintet 2012
Yarra Valley, Australia
Established in 1971 by John and Marli Middleton, Mount Mary was one of the first vineyards planted during the resurgence of the Yarra Valley as a premium wine producing region. Now regarded as Australia's premier cool climate Cabernet, it was always John's dream to create such a wine, and Quintet is his dream realised. The aromas are dominated by violets, cherries, cassis, licorice and spice, with a level of vibrancy only seen in the very best vintages. The palate is built around beautifully ripe, ultra-fine grained tannin. Perfect with strongly flavoured dishes such as roast lamb or steak.
Savaterre Pinot Noir 2013
Victoria, Australia
Nestled in the mountains of northeastern Victoria, just outside the picturesque town of Beechworth, lies the Savaterre vineyard. The site was discovered in 1996 by owner and winemaker Keppell Smith, a former broker, after an expansive search through Australia's quality wine regions. The mild summer days, cool climate elevation combined with the rolling foothills of the Victorian Alps creates a magic combination. This Pinot Noir is floral, with perfumed cherry-plum and cranberry lifting through the spice. Elegant on the palate with red fruits and hints of smoked meat on the long and complex finish. Great to pair with duck or mushroom based dishes.
Chateau Quinault L'Enclos 2006, Saint-Emilion Grand Cru

Chateau Quinault L'Enclos is a vineyard situated within the town of Libourne, and being warmer than the rest of the Saint-Emilion Grand Cru, the grapes ripen earlier. The 2006 was one of the final vintages made by Alain Raynaud, who put this property on the map before selling to the world renowned team of Chateau Cheval Blanc. A ripe plum-scented nose, touches of liquorice and dark chocolate but with good definition. The medium-bodied palate has notes of spice and black pepper.
Two Hands Lily's Garden Shiraz 2014

When Micheal Twelftree and Richard Mintz created Two Hands wines, their intention was to break the mould of formulaic multi-regional Australian blends and showcase the diversity of Australian Shiraz by expressing the characteristics of individual regions and going as far as single vineyard productions. Aromas of spiced plum, blueberry pie, with hints of vanilla and toast. Hedonistic, rich and intense with complex flavours of mocha coffee beans, vanilla pod and clove. Suitable for rich, flavourful and spicy dishes.

Chateau d'Yquem 2005

Chateau d'Yquem has for many years topped the list of the world's most revered dessert wine and rightly so. There are very few wines that reach the intensity, purity and complexity whilst delivering unequivocal pleasure to the drinker. The 2005 was great in every way and one of their best ever wines was produced. The nose offers notes of pure honey intermingled with vanilla and fleshy stone fruits. The palate is rich and unctuous with intense fruit flavours such as pineapple and candied citrus peel. The finish is incredibly long and one might argue with its richness it is a dessert in itself but this wine pairs extremely well with a range of desserts.

Graham's Colheita 1963 Single Vintage Tawny Port
Duoro Valley, Portugal
This rare, single vintage Tawny port, (a small lot from a limited production) has been especially selected for passengers of Emirates Airline. Single vintage tawny, for those of you unfamiliar to the style, is a Port aged in the barrel until release. The longer the wine is aged in wood, the lighter and more "tawny" in colour it becomes. The flavours also change considerably. The 1963 has developed an intense, complex nose of fig, walnut, cigar box and coffee. The palate is beautifully balanced, full-bodied and sweet with a viscous texture and further notes of dried date and raisin on a long and luxurious finish.

It was Elias and Colleen Jreissati's dream to create an Australian winery that would produce exceptional French inspired wines, however for this they needed the perfect location. It took them ten years to find it, but the plot of land they discovered rising from the shores of the Yarra River was perfect for their vines to thrive in. These East facing steep clay loam slopes, at similar elevations to the Grand Cru vineyards of Chablis in France are situated on an incredibly unique and advantageous position. The 2015 Katherine's Paddoc has aromas of stone fruit and grilled nuts with hints of chalk. The palate combines richness with a fine-boned, flinty structure and restrained acidity. A great wine to pair with seafood and grilled white meats.

The beautiful oriental themed Chateau of Cos d'Estournel is situated in the most northerly Medoc commune of Saint Estephe. As a neighbour of the great Pauillac Chateau Lafite, Cos is capable of producing some of the best Cabernet grapes of Bordeaux, which makes up 60% of the blend. Due to a high proportion of clay the Merlot produced by this property imparts a voluptuous character to the wine. A nose of blackcurrants, damson, cedar wood and licorice lead to a medium weight body with ripe fruit and a long, pure finish. A cerebral wine to be enjoyed with red meat dishes.

Nestled in the mountains of northeastern Victoria, just outside the picturesque town of Beechworth, lies the Savaterre vineyard. The mild summer days, cool climate elevation combined with the rolling foothills of the Victorian Alps creates a magic combination. Chateau d'Yquem has for many years topped the list of the world's most revered dessert wine and rightly so. There are very few wines that reach the intensity, purity and complexity whilst delivering unequivocal pleasure to the drinker. The 2005 was great in every way and one of their best ever wines was produced. The nose offers notes of pure honey intermingled with vanilla and fleshy stone fruits. The palate is rich and unctuous with intense fruit flavours such as pineapple and candied citrus peel. The finish is incredibly long and one might argue with its richness it is a dessert in itself but this wine pairs extremely well with a range of desserts.

Graham's Colheita 1963 Single Vintage Tawny Port

This rare, single vintage Tawny port, (a small lot from a limited production) has been especially selected for passengers of Emirates Airline. Single vintage tawny, for those of you unfamiliar to the style, is a Port aged in the barrel until release. The longer the wine is aged in wood, the lighter and more "tawny" in colour it becomes. The flavours also change considerably. The 1963 has developed an intense, complex nose of fig, walnut, cigar box and coffee. The palate is beautifully balanced, full-bodied and sweet with a viscous texture and further notes of dried date and raisin on a long and luxurious finish.

Billecart-Salmon is one of the most stylish boutique Champagne houses. Since being founded in 1818, it has remained one of the best kept secrets in wine.
Production is small. Francois Billecart prefers it that way. It allows him total control of a family business that has won the adoration of serious Champagne lovers.
The gorgeous winery and underground cellars are hidden in a small village surrounded by vines. Billecart uses some old techniques such as basket presses to gently extract the finest juice. Modern technology is used to create extra cold temperatures during fermentation, which extend the process, and adds freshness, elegance and delicacy to the wines.
There is an extra-long ageing period in the dark underground cellars, allowing the complex flavours to unfold.

Rose Champagne
Piper Heidsieck, Rose Sauvage, France
Founded as Heidsieck and Co. by Florens-Louis Heidsieck in Reims two days after the Bastille Day in 1785, the brand itself came about in 1838 after the marriage of Madame Heidsieck and Henri-Guillaume Piper. The brand has been perceived as an element of prestige and glamour.
A blended rose added to the great Piper Heidsieck Cuvee Brut classic blend is a generous champagne. A great, not so classic, structured, full-bodied Champagne, with more than just a hint of red fruits and elaborated with a majority of Pinots Noirs, wines from over 100 crus, Meuniers from the Grande and Petite Montagne de Reims.
The nose is rich and expressive with red fruit nose - blackcurrant, blackberry, cherry and Gariguette strawberry freshened with citrus, mandarin and blood orange. A finish lifted with paprika and saffron. The palate is brisk, original and juicy wine which simultaneously offers black cherry, blackberry, pink grapefruit and blood orange notes. This structure and fruitiness is enriched with warm, spicy notes of Espelette pepper, tea and liquorice.

Chardonnay
J. Moreau & Fils, Chablis Premier Cru 2015, Chablis, France
The most recent list of Premiers Cru was issued in 1986. 79 hamlets figure on the list and cover a surface area of approximately 700 ha. The winegrowers of Chablis grouped together these hamlets under the names of 17 "climats" or single vineyards. These vineyards are located on either side of the Serein river in the communes of Chablis, Fontenay, Maligny, Chichee, La Chapelle-Vaupelpeigne, Courgis, Fleys, and Beines.
The vintage started in the aftermath of an uneven winter, rather mild at the beginning. This climatic conditions sourced a very comfortable health status for the vines and a quick maturing. Unfortunately, a violent hail storm took place in the Chablis area on the night of September the 1st constraining the vine growers to harvest the damaged plots. The name "Stump Jump" relates to the significant South Australian invention - the Stump Jump plough. This plough became a popular piece of machinery for ploughing fields because of its ability to ride over stumps and gnarled "mallee" Eucalyptus roots and snags, saving valuable time and resources by not stopping the draught horse.
A wet summer and winter set the vines up perfectly for the 2012 vintage. Spring and summer were drier than normal, resulting in lower fruit yields. A small heat burst just prior to veraison assured a solid colour change, small berries and pronounced tannins in the grapes. The red wines from this vintage are black, sold and quite structured, the biggest year for some time, not oily but definitely gutsy.
A generous and juicy McLaren Vale Shiraz, loaded with sweet fruits, blackberry, plum, raspberry, contrasted by complexing subtleties of spice, earth and game. The Altano DOC Douro wines are produces from traditional grape varieties grown in the Symington Family's Douro Valley vineyards. Wine makers since the 19th century, they have lived and worked in the region for generations.
The grapes are hand-picked into small carrying containers. There is an initial hand-sorting of the bunches, followed by gentle destemming. The whole berries are again hand-sorted, crushed and gravity-fed into stainless steel fermenting vats.
The aroma of this vintage is intense, complex and floral with flavours of ripe red fruit and bergamot with notes of chocolates and spices.
Made from 100% Touriga Nacional, Altano Reserva is a full bodied wine with a long and lingering finish.

Valdivieso, Eclat Botrytis 2013, Curico Valley, Chile
Based in Lontue, the company has a wealth of vineyards and the quality of the terroir is shown by the single vineyard wines. The whole range encapsulates everything that Chile excels at: rich, vibrant flavours and smooth, glossy textures - and the wines deserve the multitude of gongs they have picked up in recent years.
The fruit was carefully selected, looking for bunches with natural noble rot botrytis. At the winery, the fruit went directly to the press. 50% of the juice went directly to barrel and the other 50% went to stainless steel tanks and underwent a careful fermentation. The wine was aged in barrels (50%) and tanks (50%) for a further 12 months.
Lovely honeyed grapefruit with some gentle candied lemon on the nose. Very intense on the palate with some good natural fruit sweetness and vibrant acidity. Well made and very enjoyable.
Food & wine pairing. This is a classic dessert wine. The perfect wine to enjoy with foie gras, blue cheese or as an accompaniment to desserts.

Colheita Ports are wines from a single harvest, chosen from the best that were produced in that year. A Colheita will be aged throughout its life in oak casks. The wine will evolve slowly in colour, aroma and flavour, as a result of the micro oxygenation that takes place through the wood. Although they may develop well in the bottle, they are usually bottled shortly before release to the market, with an indication of the year of bottling.

A blended rose added to the great Piper Heidsieck Cuvee Brut classic blend is a generous champagne. A great, not so classic, structured, full-bodied Champagne, with more than just a hint of red fruits and elaborated with a majority of Pinots Noirs, wines from over 100 crus, Meuniers from the Grande and Petite Montagne de Reims.
The nose is rich and expressive with red fruit nose - blackcurrant, blackberry, cherry and Gariguette strawberry freshened with citrus, mandarin and blood orange. A finish lifted with paprika and saffron. The palate is brisk, original and juicy wine which simultaneously offers black cherry, blackberry, pink grapefruit and blood orange notes. The most recent list of Premiers Cru was issued in 1986. 79 hamlets figure on the list and cover a surface area of approximately 700 ha. The winegrowers of Chablis grouped together these hamlets under the names of 17 "climats" or single vineyards. These vineyards are located on either side of the Serein river in the communes of Chablis, Fontenay, Maligny, Chichee, La Chapelle-Vaupelpeigne, Courgis, Fleys, and Beines.
The vintage started in the aftermath of an uneven winter, rather mild at the beginning. This climatic conditions sourced a very comfortable health status for the vines and a quick maturing. Unfortunately, a violent hail storm took place in the Chablis area on the night of September the 1st constraining the vine growers to harvest the damaged plots. However, the heat of the last weeks of September allowed the vine growers to obtain highly qualitative musts. the last grapes were pressed on September 21st and the entire crop was particularly balanced and promising.
The visual is pale gold and crystal-clear. Nose is an exuberant bouquet of apricots emphasized by mineral and menthol notes. In the palate it tastes fresh and fruity in the mouth, with grapefruit flavors. A long finish and complexity typical of 1er Cru wines.

An early bud break coupled with a long warm growing season provided for an early harvest in the Clarksburg winegrowing region. Yields were slightly lower than the previous vintage which produced concentrated, flavorful grape clusters. The wine was fermented and aged in stainless steel, resulting in a light and crisp Viognier with heavy fruit up front. Blending in a small percentage of French Colombard and Muscat rounded out the blend nicely, adding a complex layer of grapefruit and supple flavors.

The blend of 60% Merlot, 30% Cabernet Franc and 10% Cabernet Sauvignon is typical of many Saint-Emilion estates. But the low yields, precision vineyard management and superstar winemaker Michel Rolland's touch in the cellar have created a superb wine.
The nose shows notes of fresh berries, espresso, milk chocolate and plum. The palate is elegant, with medium to full body, soft light tannins, and beautiful depth of flavor. Monbousquet always shows vivacity, intensity, and a new classic Bordeaux style.

Based in Lontue, the company has a wealth of vineyards and the quality of the terroir is shown by the single vineyard wines. The whole range encapsulates everything that Chile excels at: rich, vibrant flavours and smooth, glossy textures - and the wines deserve the multitude of gongs they have picked up in recent years.
The fruit was carefully selected, looking for bunches with natural noble rot botrytis. At the winery, the fruit went directly to the press. 50% of the juice went directly to barrel and the other 50% went to stainless steel tanks and underwent a careful fermentation. The wine was aged in barrels (50%) and tanks (50%) for a further 12 months.
Lovely honeyed grapefruit with some gentle candied lemon on the nose. Very intense on the palate with some good natural fruit sweetness and vibrant acidity. Well made and very enjoyable.
Food & wine pairing. This is a classic dessert wine. The perfect wine to enjoy with foie gras, blue cheese or as an accompaniment to desserts.

Gran Cruz, Porto 1992, Douro Valley, Portugal
Colheita Ports are wines from a single harvest, chosen from the best that were produced in that year. A Colheita will be aged throughout its life in oak casks. The wine will evolve slowly in colour, aroma and flavour, as a result of the micro oxygenation that takes place through the wood. Although they may develop well in the bottle, they are usually bottled shortly before release to the market, with an indication of the year of bottling.
Wine of great aromatic complexity where wild honey and trace of dried fruits such as almonds and figs stands out and hints of spices. The colour is amber and tawny with brownish hues and greenish tinges.
It has freshness and elegance ending slightly dry but with great persistence.

The wine will evolve slowly in colour, aroma and flavour, as a result of the micro oxygenation that takes place through the wood. Although they may develop well in the bottle, they are usually bottled shortly before release to the market, with an indication of the year of bottling.
Wine of great aromatic complexity where wild honey and trace of dried fruits such as almonds and figs stands out and hints of spices. The colour is amber and tawny with brownish hues and greenish tinges.
It has freshness and elegance ending slightly dry but with great persistence.
