Champagne

2009 Dom Perignon, Champagne, France
Champagne, with its famous limestone soils and cold climate, makes the world's greatest sparkling wines and the most famous of them all is Dom Perignon. DP as it is affectionately known, is named after the Benedictine monk who pioneered many of the techniques used in Champagne today. Dom Perignon is always from a single vintage and always a blend of Chardonnay and Pinot Noir grapes. The current Chef de Cave is the highly talented and respected Richard Geoffroy. 2009 was not without its challenges but was a warmer vintage overall producing a wine that is generous yet shows DP's legendary elegance and finesse. Delicious!

2004 Krug, Chamgagne, France
Champagne has no peer and Krug is undisputedly one of its greatest names. Founded in 1843 by Joesph Kru, the wines of Krug are seen by many as the ultimate expression of Champagne - effortlessly combining power and intensity with finesse, length and balance. In addition to Chardonnay and Pinot Noi, Krug famously includes a higher percentage of Pinot Meunier in their blends than most other prestige cuvees. Vintage Krug not only reflects the House style but also the character of a specific year and 2004 was an exceptional vintage. A rare champagne of extraordinary quality which has benefited from over 12 years of maturation in the cool cellars of Reims.

White Wine

2015 Domaine Long-Depaquit, Maison Albert Bichot, Chablis Premier Cru Les Vaucoupin, Burgundy, France
Vaucoupin is a Premier Cru vineyard site in the south of the Chablis wine region. This climate is distinguished from the surrounding countryside by very steep slopes and pockets of high-quality Kimmeridgian soil, which have justified its delimitation as a Premier Cru vineyard. This wine is fresh with discreet limestone-mineral aromas over white fruit (whitecurrant). On the palate, it has a very smooth, harmonious body wth great length. The varied and sustained aromatic pallet of this great wine allows a double vocation. As an aperitif or for a convivial meal, it will pair well with seafood, scallops, fish and white meats.

2014 Chateau Long-Depaquit, Maison Albert Bichot, Chablis Grand Cru Les Blanchots, Burgundy, France
Burgundy is renowned for being the birthplace of some of the greatest white wines in the world. Part of the region's fame is due to the success and popularity of Chablis - a sub-region within Burgundy that produces light-bodied, crisp, white wines. But this Chablis Grand Cru Les Blanchots is not your standard Chablis. This tiny 1.5-hectare grand cru vineyard site is managed by Chateau Long-Depaquit, a winery owned by one of the tope negociants in Burgundy, Albert Bichot. While simple Chablis is light with a hint of citrus, this serious grand cru rendition has much greater depth of flavours and lovely aromatics of lillies and jasmine with an impressive minerality that will enable it to age for decades.

2015 Selbach Oster Zeltinger Sonnenuhr Riesling Spatlese, Mosel, Germany
Of all the vineyard regions in the world there are few that can rival the great wall of south-west-facing vines that sweep up the Mosel valley from Bernkastel to Zelting. The Mosel Valley is Germany's coolest major wine region, and only the most perfectly-sited vineyards can ripen their grapes. You couldn't choose a more perfect site than the Sonnenuhr - the sundial vineyard - of Zelting. In the 19th Century these vineyards were more highly rated than any others in Germany, so the Selback family, with over 400 years experience, are our perfect producers. 2015 was a wonderful harvest, and this Spatlese (late-picked) Riesling has a fantastically rich peachy fruit, layered with creme fraiche, and streaked through with zingy lemon acidity, the cool kiss of slate and a scent like the sape of the vine itself.

2014/2016 Bernkasteler Lay Dr Loosen Riesling Kabinett, Mosel, Germany
When you drink a wine it's nice to know that the grower could also be sharing a glass, but that he would be sitting on the porch outside his house gazing across at the actual vines which produced the wine. That's what Ernie Loosen can do at the end of a long day, because the family house sits right by the Bernkasteler Lay vineyard which is virtually lapped by the waters of the beautiful Mosel river. The vineyard's slate soils suit the Riesling grape perfectly, giving a wine that really tastes of slate, as though honey had been smeared on the cool rock, and then lemon had been squeezed on it for zest.

Red Wine

2006/2008 Chateau Rauzan-Segla, Margaux, France
The wines from the village of Margaux are considered to be the most scented, the most supple and intriguing of all the wines of Bordeaux. Chateau Rauzan Segla has for hundreds of years been regarded as one of the village's greatest properties, along with Chateau Margaux itself. So it made perfect sense when the perfume and fashion house of Chanel bought the vineyard in 1994, with the objective of turning Rauzan-Segla's wines into a reflection of the scents and glamopur which Chanel embodied. 2006 is a strong, serious vintage, yet this wine is fragrant and mellow, with its rich fruit texture threaded with sweat perfume and lightly coated with savoury cream. The 2008, a highly rated vintage, but one which is only now showing its classic style. Rauzan's mellow fragrance and soothing texture suits this vintage perfectly.

2016 Clonakilla O'Riada Shiraz, Canberra District, Australia
The climate in Canberra is cool and in stark contrast to many othe Australian wine regions. Not surprisingly, Shiraz grown here is very different to the wines from warmer regions - medium-bodied and perfumed rather than rich and powerful. Clonakilla is a small family owned winery established in 1971 that has developed an extrordinary reputation for distinctive high quality wines under the guidance of winemaker Tim Kirk. A deep thinker, Kirk is certainly one of the winemaking stars of his generation. Very much in the modern style, this wine has vibrant pepper-spice characters, good acidity and fruit brightness. A quintessential "cool climate" Shiraz.

2015 Paringa Estate Pinot Noir, Mornington Peninsula, Australia
The Mornington Peninsula, southeast of Melbourne, is surrounded on three sides by water. The region's cool maritime climate is particularly well suited to the production of top quality Pinot Noir which is very much a local specialty. The region's biennial International Pinot Noir Event is a must for any keen wine traveller. Established by the winemaker Lindsay McCall in 1985, Paringa Estate is now considered to be one of Australia's most consistent and best Pinot Noir makers. This wine combines Pinot fruit purity with savoury notes, and lightness with power. A top example of this exciting grape variety and region.

Port

Dow's 20 Year Old Port, Douro, Portugal
With twenty years of cask aging, this Port has acquired a gorgeous aroma of dried flowers, toffee, sweet spices and dried figs. The tannins have softened and evolved into a silky texture with subtle, layered flavours that are persistent on the finish. A beautifully balanced Port that can be enjoyed on its own or with cheese or dessert.

The prestige cuvee of Taittinger, Comtes de Champagne first appeared in 1952. A Blanc de Blanc, the Chardonnay grapes are sourced from prized vineyards including Grand Cru sites in Avize and Cramant. The 2006 is a powerful, refined and expressive Champagne, this vintage is showing citrus fruit aromas, lime blossom and notes of caramelised grapefruit. It has great length and complexity and is a perfect wine to begin a fine meal, yet could be enjoyed throughout.

Bursting with summery goodness on the palate of mango and peach like characters supporting herbal grassiness.

Ten Minutes by Tractor "Wallis" Chardonnay 2015, Mornington Peninsula, Victoria
Ten Minutes by Tractor was established as a label for wines produced between three families (Judd, McCutcheon and Wallis) with their vineyards 10 mins by tractor from each other. This Chardonnay, produced from the Wallis family vineyard, is almost Chablis-like in style; fine, elegant and long, with nectarine and grapefruit aromas and flavours.

Henschke Giles Pinot Noir 2016, Adelaide Hills, South Australia
Crimson in colour with ruby hues. Fragrant, perfumed aromas of strawberries, cherries and cream, and wild forest berries with subtle hints of cloves and spices. The rich, juicy palate is tightly wound with layers of crushed herbs and mint, rolling into subtle red currant and wild berry fruit flavours, while the beautiful acid balance and fine-grained tannins provide a long and velvety finish.

Shaw + Smith Balhannah Vineyard Shiraz 2015, Adelaide Hills, South Australia
Envisaged over a long lunch, the intention of creating refined cool climate wines has very much been achieved at Shaw + Smith. Nestled close to Hahndorf, the 46 hectare Balhannah vineyard sits at an altitude of 420 metres. Producing shiraz in this vintage that is deep ruby in colour with hints of dark fruits, black pepper, spice and liqourice aromas. The wine is elegant, medium bodied with great shape and mouthfeel.

Bleasdale The Iron Duke Cabernet Sauvignon 2013, Langhorne Creek, South Australia
After 168 years of making wine, the Bleasdale estate is at the forefront of quality in Langhorne Creek, South Australia, and throughout Australia. Winemaker Paul Hotker was is James Halliday's 2018, and the sturdy, full-bodied 2013 Iron Duke is one of the reasons why. It leads with concentrated fruit flavours of black fig, black raspberry and plum with the scent of liquorice and campfire. It lingers long on the palate with a comforting warmth and generosity that is refreshed by a prick of tartness typical of great vintages like 2013.

Fowles Upton Run Reserve Shiraz 2008, Grampians, Victoria
This is from the Fowles family vineyard in the Strathbogie ranges in Victoria. Headed by Matt Fowles - a former lawyer who swapped vitriole for vineyards, this 2008 Upton Run Reserve Shiraz is a terrific example of Shiraz from these high ranges. At 10 years old the wine has moderate to pronounced aromas of crushed blackberries and black currants, cloves, liquorice, cedar and black pepper. It is medium-full bodied, densely packed berry flavours with a medium-firm level of ripe, rounded tannins and a long finish of pepper and toasty oak.

Charles Heidsieck Brut Reserve, Champagne, France
Champagne, situated in the north of France with its cold climate and famous limestone soils is one of the most famous wine regions in the world in both historic and quality terms. Charles Heidsieck, established in 1851 by Charles, a scion of the famous Heidsieck family, is now one of the most admired Houses in Champagne today. Made by "chef de cave" Thierry Roset, this multi-vintage wine is a blend of Pinot Noir and Chardonnay sourced from 60 different vineyard sites. Remarkably, over 40% of the blend is made up of older reserve wines which gives Charles Heidsieck its distinctive honeyed complexity, richness and maturity.

White Wine

2017 Antonin Rodet Vire-Classe L'Epinet, Maconnais, Burgundy, France
Established in Mercurey in the heart of the Burgundian Cote Chalonnais, Maison Antonin Rodet cultivates a 90-hectare vineyard over the appellation as well as on the villages of Maranges since 1875. The terroir of "L'Epinet" is very specific and planted with old vines (50 years in average) that grow on the top of the slope. There, the terroir is composed of a red-clay based subsoil and a stony ground that produce wines with great minerality and roundness. This wine can be enjoyed in its youth for its fruitiness, alone as an aperitif or as a companion to your meal.

2017 Mount Riley Sauvignon Blanc, Marlborough, New Zealand
New Zealand's Marlborough region is home to many of the world's most distinctive Sauvignon Blanc wines. This racy and vibrant style has a strong international reputation and is typified by a lifted herbaceous leafy aroma, crisp mouthwatering acidity and wonderful overall freshness. Established by the Buchanan family in 1992 and run by founder John, his daughter Amy and son-in-law Matt Murphy, Mt Riley has an excellent reputation for outstanding Sauvignon Blanc.

Red Wine

2014 Chateau Cambon La Pelouse Cru Bourgeois Haut Medoc, Bordeaux, France
Chateau Cambon La Pelouse is delicately positioned between the Classified Growths of Cantemerle and Giscours, right on the edge of the world famous Margaux Appellation. This is the place where you first begin to notice the billowing banks of deep gravelly soil that mark out the best vineyards in the Medoc. Sometimes they are so stony you can barely see any earth. But this is the soil that Cabernet Sauvignon loves while the Merlot is happy with a little more sand amongst the pebbles. Cambon La Pelouse has both soils in abundance, and the grapes, grown without chemical additions, produce dark, deep wines, with tremendously mouthfilling black plum, black cherry and liquorice richness all wrapped in the warm spice of a year spent ageing in French oak barrels.

2015 Clarendelle, Bordeaux, France
In Bordeaux, arguably the largest and most important fine wine region in the world, five chateaux rank as first growths producing the finest Cabernet Sauvignon-based wines, one of which is Haut-Brion. Clarendelle is owned and managed by the same winemakers as Haut-Brion and has been producing excellent wines since its inception in 2005. Haut-Brion and Clarendelle are currently headed by Prince Robert de Luxembourg and winemaking is led by the talented Jean-Philippe Delmas. The 2015 vintage is the best Clarendelle produced thus far - a generous, velvety red wine filled with ripe blackberries, violets and cedar. This is a wine of great balance, intensity and wonderful depth.

2016 Fontanafredda Briccotondo Piemonte Barbera, Piedmont, Italy
Wines from Piedmont made from Nebbiolo, such as Barolo and Barbaresco, can be quite tannic and difficult to enjoy in its youth but Barbera is quite the opposite. Barbera has light tannins despite its deep ruby color with vibrant fruit character. Fontanafredda has long been a benchmark producer of Barbera since the 1880s. This delicious, juicy Barbera is filled with blackberry, red plum and cherry fruit with layers of fresh herbs and pepper. It spends only a brief time in oak, about six months, in a mix of both large Slavonian oak casks and French barrels. The wine's supple, light tannins and brilliant fruit character means it is delicious to enjoy now.

Dow's 10 Year Old Tawny Port, Douro, Portugal
Port begins its life as a fiery, purple sweet wine. It takes a long time to soften and mellow. This wine has been lying quietly in its barrel for 10 years, slowly losing its fierceness and transforming itself into a gentle amber wine, laden with fig, plum and raspberry fruit.
