Usually there is something vegetarian available on the menu, I haven't had a problem.
Once I flew in business on united and forgot to change my profile indicating I wanted a Hindu meal automatically. I got a Hindu meal to my surprise (and the flight attendants), I think it was a bigger version of the economy Hindu and all the business class other courses. I was pretty happy, either way.
