Ha!! Would've loved to have seen a pic of the lady sporting 7 lids at the same time!! 
We've had a couple of instances where we've had to stuff a small bag into a backpack or something to get through security. Never really had any major issues though...

My mom, a true cowgirl at heart (so embarrassing!), flew from DEN to ABQ with my dad for his conference, at which they were going to have a country-western dance. Naturally, she brought her favorite cowboy hat and wore it on the plane so it wouldn't get crushed. Well, she won best costume at the dance, and one of the prizes was ... a cowboy hat. She didn't want that one to get crushed on the plane back to Denver -- so she wore both hats.
She assures me that she didn't yell, "I AM ERDEHOFF'S MOTHER!!" as she walked through DEN wearing two cowboy hats, but I'm not convinced.

Now for some unsolicited off-topic advice: Although I don't really understand why you find it embarassing that your mom wore one or two cowboy hats on the plane (she sounds like a very practical lady to me), if you want to do her and her hat(s) a favor and save yourself some embarassment you could buy her a hat can. She'll probably be more comfortable on the plane if she doesn't have to wear the hat constantly and the hat will be much safer in the overhead - or under the seat - if it's in it's own little carrier.
