Bump vs. Cancellation

Why is it when you are bumped from a flight, you usually get some sort of compensation (cash and/or free ticket), but when your flight is cancelled, you get nothing more than a meal coupon?

The airline still makes money off the flight when they bump you, as it goes out 100% full. On cancellations, they're not generating any revenue, and might even take a loss if they have to book you on competing carriers. You still might get some consideration if you write your airline, though (miles, vouchers) and let them know you were inconvenienced by the cancellation.
