Would you advise that you go to the gate and tell them that you're
not going to take the flight, then they wouldn't be paging you?

Totally unnecessary, unless you have a pathological problem with your name going out over a PA system. You won't be the first person who got tied up shopping, or eating, or whatever, and missed a flight. They'll leave without you, knowing that if you show up later there are procedures in place to handle the situation.
