Try Abercrombie and Kent and do the city of Cairo and a 3/4 day boat trip down the Nile River to the cities of the Pharoahs - great trip! You can add on Jordan if you want to - but we found Cairo fascinating, albeit a bit frenetic!

You might also take a look at www.maupintour.com. I did a trip with them last year which was wonderful. My trip was longer but I believe they offer a shorter one also.
