Cold is usually fine. I've only run into a few that were too noisy to sleep comfortably. Partially filling the bathtub with hot, steamy water can also help with the humidity problem.
My peeves tend to be hotel's (a) not changing the air filter regularly (makes a big difference to those of us with dust allergies) and (b) using perfume on the carpet (in Carpet Magic, etc.). Disney hotels are the only ones I've been in which usually (one exception that I remember) have relatively clean air filters. With other chains, I've wondered if they ever change them except when requested by a patron. Once I even had to show the maintenance guy that came up with the new filter how to remove the cover to replace the filter.
