Help on upcoming trip down under

2004 trip down under

I was on Air NZ from LA to SYD round trip. I just changed it to UA (Went for the seats on UA, (the food is a second issue for me). I have not got the new ticket yet and hope they will let me still make the change to Air NZ from SYD to Auckland without charging $75 more.
If you know of any good places to stay at a great price, at any of the locations I will be at it would be greatly appreciated. My major concern at this time is Sydney. I would like to spend under $100 a day.
I have the following schedule so far and need all the help I can get.

Please let me know where you think I am spending too much time and where I need more time. Time is not any issue. I have up to 145 days. Also any additional places I should go.

Thanks in Advance for your help,

Will spend time doing the following items
Surf contest
Wine tasting/tours
Taking picture of everything
City tours
Working out
Local attractions
Sailing
Local pubs

This is also posted in the Australia/South Pacific Travel forum here. A number of FTers have replied there so I suggest this thread be closed to keep replies in one place (and the more appropriate forum IMHO).
