Flying with a large knife
We are going to our parents for Thankgsgiving and will be doing some cooking and I would love to brong my Henckels 12-inch chef's knife. I obviously can't carry it on, but would it be okay in a checked bag?
I know for guns that you have declare them before entering the airport, IIRC...

From the TSA website ( http://www.tsa.dot.gov ):
Note that round-bladed, butter and plastic cutlery knives are now specifically permitted to be carried on.
An aside - the TSA keeps totally redesigning their entire website about once a week - so you need to drill down to search for stuff rather than bookmarking...

The husband of one of my nieces is a professional chef. The two them flew LAX-EWR last Thanksgiving for the family meal, which he was going to prepare. (I strongly urge FTers who don't already have chefs in the family to find one who will marry in.) He brought his full set of knives, naturally in checked baggage.
No problem eastbound. Westbound at EWR, the check-in agent said "no." He asked for a supervisor. The supervisor asked the agent "What can he do with them if they're in the baggage compartment? It's not like knives can explode or anything," and told her to check them in.
End of story.
In other words, you should be OK, but don't be too surprised to encounter someone who doesn't know it.

On our vacation last summer, my older kid decided he had to buy an actual sword -- a sharp one -- in Malaysia. Coming home BKK-SIN-SFO last summer, we just packaged it up, long and narrow, and checked it. No problem.
