I stayed at the Grand Hotel Beijing last October, and was very impressed with the room, amenities and location. The pool and health club were lots of fun. Some of the rooms actually overlook the Forbidden City.
Restaurants were not cheap, but served excellent food.
Some of the front desk staff seemed to be struggling with their english, but the concierge was very helpful when we wanted to hire a taxi to take us to the great wall for the afternoon.

I also liked the St. Regis, but I have no points of comparison, since I have only been to Beijing once!
It was a five-day Starwood award stay on the Conde Nast promo, so it cost me a mere 25,000 Starpoints. Therefore, I was less critical than I might have been had I been paying cash.

Swissotel is good, often with phenomenal rates as described. The St Regis is a standard unto itself. And the Traders is a solid all around hotel close to business areas.

I stayed in the Traders hotel last year for about $100 a night and thought it was a good value.

Last month I stayed at the Kempinski, Grand Hyatt, and St Regis.
The Kempinski was okay, but value wise it is a bit overpriced.
My favorite is the Gand Hyatt. Its new, service is excellent, rooms are very good and a good value.
The St Regis is close to the embassy district. Its a little more expensive than the Hyatt but service and rooms are excellent. The health club is about a block walk from the lobby. My room came with a personal butler, but the butler disappeared after my initial check in. The butler is supposed to be available to unpack and iron three articles.
Either the Hyatt or St Regis are good choices.

There are TWO embassy districts in Beijing.
The St. Regis is in the Jianguomenwai embassy district; it's about two miles east of the Forbidden City.
The OTHER embassy district, Sanlitun, is farther away, in the northeast corner of Beijing. (Great Wall Sheraton and Hilton are in this area.)
