Stayed in the Hotel Le Donjon in Etretat a while ago and enjoyed it a lot. Etretat is a charming town and well-located; some of the most famous seascape paintings are of the beaches at Etretat. At the Donjon, we had a very comfortable and pleasant room looking out onto the water, and the hotel has a decent restaurant.
(Donjon is French for dungeon, btw.)

My favorite website for hotels in France is: www.hotels.fr
the above site will give you pictures and honest info on the property. I've found some steals like $49 in the ST.LO area among others.
If $ is not the object, but perfection is
try www.relaixchateaux.com
