my favorite (last time in nov-1999) is the Wildflower at the Lodge (the Lodge is where it all started). The Wildflower is upscale, luxury, modern american with a french touch. And for after-ski(pre-dinner/after-dinner go next door (same place, same level) to Mickey (s bar): Micky is the pianist himself (ask for Gisela's favorite tune, she has it on CD: 'The last run', a tune Mickey wrote for the Alpine Downhill World Ski Championships. And they even mix 'side-cars'!

In addition to Wildflower, I would recommend Sweet Basil and the Left Bank.
You may want to check out zagat.com which, I believe, lists a number of restaurants in the vail valley.
There are a number of good restaurants in Beaver Crrek and other parts of the valley as well.
